This is by far the most popular breakfast we serve in our house. The reason I love it? It's macro balanced, meaning my children are getting a meal containing healthy fat, protein and complex carbohydrates. That helps reduce the risk of their blood sugar spiking (and them having a bigger morning tantrum than usual!). If they've got school or daycare, I also like to think of it as a good start to their day: "brain food", with no empty calories.

The addition of Kids Immune Protein is completely optional, but I like to make a batch of each flavour (strawberry & white choc, vanilla, and cacao), which I freeze and then air-fry on busy mornings.

Ingredients

Waffle batter

  • 1 cup self-raising gluten-free flour (or plain GF flour + 1½ tsp baking powder)
  • ½ cup almond flour
  • ½ cup kefir, yoghurt or milk of choice
  • 1 tbsp ghee, melted
  • 3 eggs
  • 2 tbsp Kids Immune Protein (optional): Strawberry Fort, Cacao Cavalry or Vanilla Vanguard

Optional extras

  • White or dark choc chips (add to any version)
  • Olive oil spray (for the waffle maker)

Flavour ideas

  • Strawberry & white choc: Strawberry Fort + white choc chips
  • Vanilla: Vanilla Vanguard
  • Cacao: Cacao Cavalry

Method

  1. 01 Add all the ingredients except the choc chips to a blender and blend until smooth.
  2. 02 Stir the choc chips through by hand so they stay whole.
  3. 03 Heat your waffle maker and lightly spray with olive oil.
  4. 04 Pour in the batter and cook until golden and crisp (your machine's indicator will tell you when they're ready).
  5. 05 Repeat with the remaining batter. If you're using a heart waffle maker like mine, cut the large waffles into smaller love hearts.
🧇 The waffle maker I use I use the Breville the Crisp Control Waffle Maker (BWM250BSS) from The Good Guys. If the batter is too thick to pour, add a splash more kefir or milk.
📦 Freezing and reheating Let the waffles cool completely on a wire rack. Freeze them in a single layer on a lined tray until firm, then transfer to a zip-lock bag or container (label each flavour!). They'll keep for up to 3 months. Straight from frozen, air-fry at 180°C for 4 to 6 minutes until hot and crispy. A toaster works too.
