Ash from @ashleigh.cooks has recreated another nostalgic party favourite with these healthier chocolate crackles. They're rich, chocolatey and wonderfully crunchy (like the original), but made with simple ingredients and no refined sugar. With cacao, coconut and a little added protein, these are a fun treat that still feels a little more balanced.
Ingredients
- 3 cups brown rice puffs
- 1 cup desiccated coconut
- ΒΌ cup cacao powder
- 1 tbsp Unrefined Nutrients Kids Immune Protein (Cacao Cavalry)
- 200g Copha, melted
- 1 tsp vanilla extract
- Pinch sea salt (optional)
- Sprinkles (optional)

Method
- 01 Line a 12-hole mini muffin tray with mini paper cases. You can also use regular muffin trays or a lined baking tray.
- 02 In a large bowl, combine the brown rice puffs and desiccated coconut.
- 03 In a separate bowl, whisk together the melted Copha, cacao powder, maple syrup, vanilla extract and protein powder until smooth.
- 04 Pour the chocolate mixture over the dry ingredients and mix well until evenly coated.
- 05 Spoon the mixture into the mini cases and gently press down.
- 06 Refrigerate for 1β2 hours, or until fully set.
