This recipe is one of our favourites and was developed by one of our loyal customers, Anika Boxall. Anika creates some amazing mum & toddler-friendly healthy recipes on her Instagram account @nourishedbyanika.
🛒 Ingredients
- 250g frozen cherries
- ¼ cup Kid's Immune Protein (Strawberry Forte)
- 1 ½ cups desiccated coconut
- 2 tbsp coconut oil
- Pinch of salt
- Dark chocolate, for coating
- Freeze-dried strawberries, for topping
👩🍳 Method
- Add the frozen cherries to a small pot and bring to a simmer. Stir consistently until the cherries soften and the liquid thickens into a syrupy reduction.
- Transfer the cherry reduction to a high-speed blender. Add the desiccated coconut, strawberry protein powder, coconut oil, and a pinch of salt. Blend until everything comes together into a thick, sticky mixture.
- Line a small container with baking paper, then press the cherry coconut mixture evenly into the base. Freeze for 30 minutes to firm up.
- Melt the dark chocolate.
- Remove the cherry mixture from the freezer and cut into bars. Dip each bar into the melted chocolate, ensuring it’s fully coated.
- Sprinkle freeze-dried strawberries over the top of each coated bar while the chocolate is still wet.
- Place the bars in the fridge until the chocolate has set. Store in an airtight container in the fridge for up to 3 days, or in the freezer for up to 2 months.

Tip: These bars can be cut smaller for toddler snacks, or made into bite-sized balls instead of bars for lunchboxes.
