These Mango + Strawberry Swirl Ice Blocks are one of our all-time favourites, and they were developed by one of our loyal customers, Anika Boxall. Anika shares the most practical (and genuinely delicious) mum and toddler-friendly recipes over on Instagram at @nourishedbyanika. They're naturally sweet, super creamy thanks to coconut yoghurt, and they're an easy way to add a little extra nourishment. Perfect for hot afternoons, after daycare, or as a "yes" snack you can keep stocked in the freezer.

Ingredients

Mango Layer
Strawberry Layer

🍦 You'll also need: silicone ice block moulds and popsicle sticks

Method

  1. 01 Add all ingredients for the mango layer to a blender and blend until smooth. Pour into a bowl and set aside.
  2. 02 Add all ingredients for the strawberry layer to a blender and blend until smooth. Pour into a separate bowl.
  3. 03 Carefully spoon alternating layers of each flavour into a silicone block tray to create a swirl effect.
  4. 04 Place the lid on the tray, insert popsicle sticks, and transfer to the freezer to set completely (at least 4 hours or overnight).
  5. 05 Once frozen, remove from the moulds and enjoy.

Why we love this recipe

This is the kind of freezer snack you can feel good about. The coconut yoghurt makes it creamy, the fruit keeps it naturally sweet, and the swirl effect makes it fun for little ones (and honestly, satisfying for parents too). The steamed sweet potato blends in beautifully and adds extra goodness without changing the flavour.

πŸ₯­ Blender tip If your blender needs a hand, let the fruit sit for 2 to 3 minutes to soften slightly, or add a small splash of water or coconut milk to get things moving. Silicone moulds make the easiest release.
