If you're about to become a "lunch box mum" (with your little one starting school next year..), or you just need to add a few more recipes to the lunchbox rotation, Ash from @ashleigh.cooks has new recipes for you to try! These choc-coco energy bites are the perfect macro-balanced snack to keep your little one's blood sugar in check. You can opt for seed butter if you have a "no-nut" policy in your school.

Ingredients

  • 1 cup rolled oats
  • 2 tbsp Cacao Cavalry Immune Protein
  • 2 tbsp cocoa powder
  • ½ cup pitted Medjool dates (~6 large)
  • 2 tbsp maple syrup
  • 2 tbsp nut butter (or sunflower seed butter for nut-free)
  • 1 tsp vanilla extract
  • 2 tbsp desiccated coconut
  • 1 tbsp water (if needed)

Method

  1. 01 Add oats to a food processor and blitz for 10 seconds to break them up.
  2. 02 Add dates, protein powder, cocoa, maple syrup, nut butter, and vanilla.
  3. 03 Blend until a sticky dough forms (about 30 to 60 seconds). If the mix is too dry, add 1 tablespoon of water at a time until it sticks together easily when pressed.
  4. 04 Scoop tablespoon-sized portions and roll into balls.
  5. 05 Chill for 30 minutes to firm up.
🥥 Crunch tip For extra texture, roll the balls in desiccated coconut or crushed puffed rice before chilling.
📦 Storage Fridge: up to 1 week. Freezer: up to 2 months. Pop them straight into a lunchbox frozen and they'll be thawed by snack time.
