Healthier Chocolate Easter Eggs

We're all about BALANCE, but if we can get away with a healthier version of easter eggs (with some added protein to buffer all the sugar consumed), it's a win! Method

Step 1: Make the Strawberry Layer

Melt the white chocolate gently over a double boiler or in short bursts in the microwave.

Stir through the melted coconut oil and Strawberry Forte until smooth and combined.

Pour a thin layer into silicone moulds.

Place in the fridge to set for approximately 1 hour, or until firm.

Step 2: Make the Chocolate Crackle Layer

Melt the dark chocolate.

Stir through the Cacao Cavalry and melted coconut oil.

Fold in the puffed quinoa until evenly coated.

Spoon the mixture over the set strawberry layer, filling each mould.

Return to the fridge until fully set.

Storage

Store in an airtight container in the fridge for up to 1 week, or freeze for longer storage. They're delicious straight from the freezer too!
