Ash from @ashleigh.cooks has a fun, no-fuss gummy recipe for you to try. These strawberry protein gummies are made with just three ingredients and are a great lunchbox-friendly option for kids.
They have that perfect soft-but-bouncy gummy texture little ones love, without refined sugar, and are an easy way to add a little extra protein into their day.
Makes: 20–30 gummies (depending on mould size)
Prep time: 10 minutes
Set time: 4 hours or overnight
Ingredients
- 200 ml apple juice (without added sugar)
- 1 tablespoon Unrefined Nutrients Kids Immune Protein – Strawberry Fort
- 2 tablespoons gelatin powder
Method
Pour the apple juice into a small saucepan while off the heat.
Sprinkle the gelatin evenly over the surface of the juice and leave undisturbed for 5 minutes to allow the gelatin to bloom.
Place the saucepan over low heat and stir slowly until the gelatin is fully dissolved, ensuring the mixture does not boil.
Remove from the heat and allow to cool for 1–2 minutes until warm but not hot.
Gradually whisk in the protein powder until smooth.
Pour the mixture into silicone moulds or a lined container.
Refrigerate until fully set, then remove from moulds and store in an airtight container in the fridge.
