Makes: Approximately 14–16 balls
Prep time: 15 minutes
Chill time: 20–30 minutes
Ingredients
- 250 g dried apricots
- ¾ cup almond meal (85 g)
- 1 cup desiccated coconut (for mixture)
- 1 tablespoon Unrefined Nutrients Kids Immune Protein – Vanilla Vanguard
- 3 Medjool dates, pitted, soaked in boiling water for 10 minutes and drained
- ½ cup desiccated coconut (for rolling)
Method
Blend the dried apricots and soaked dates until sticky and mostly smooth.
Add the almond meal, desiccated coconut, and protein powder.
Blend again until the mixture comes together and holds when pressed.
If the mixture feels dry, add 1 teaspoon of the date soaking water.
If the mixture is too sticky, chill for 10 minutes before rolling.
Roll the mixture into balls and coat in the extra desiccated coconut.
Refrigerate until firm. Store in the fridge in an airtight container.
