Ash from @ashleigh.cooks has created these naturally sweet apricot protein balls as a simple, no-bake snack the whole family can enjoy. They're soft, chewy, and naturally sweetened with dried fruit, making them perfect for lunchboxes, snack plates, or a quick energy boost on the go. Packed with fibre, healthy fats, and added protein from our Immune Protein, these are a great make-ahead option for busy weeks.

Ingredients

  • 250 g dried apricots
  • ΒΎ cup almond meal (85 g)
  • 1 cup desiccated coconut (for mixture)
  • 1 tbsp Vanilla Vanguard Immune Protein
  • 3 Medjool dates, pitted, soaked in boiling water for 10 mins and drained
  • Β½ cup desiccated coconut (for rolling)

Method

  1. 01 Blend the dried apricots and soaked dates until sticky and mostly smooth.
  2. 02 Add the almond meal, desiccated coconut, and protein powder.
  3. 03 Blend again until the mixture comes together and holds when pressed.
  4. 04 If the mixture feels dry, add 1 teaspoon of the date soaking water. If too sticky, chill for 10 minutes before rolling.
  5. 05 Roll the mixture into balls and coat in the extra desiccated coconut.
  6. 06 Refrigerate until firm. Store in the fridge in an airtight container.
πŸ‘ Storage tip These keep in the fridge for up to a week and freeze well too. Pop them in a zip-lock bag and pull out as needed for lunchboxes or after-school snacks. They defrost quickly at room temperature.
