Ingredients
• 1 cup Greek yoghurt
• ¾ cup macadamia oil
• ½ cup Unrefined Nutrients Kid’s Immune Protein – Vanilla Vanguard
• 2 eggs
• ½ cup maple syrup or honey
• 1 ½ cups wholemeal spelt flour (sub 1:1 with gluten-free flour if required)
• ½ cup almond flour
• 2 tsp baking powder
• 2 tsp ground cinnamon
• 2 apples, diced
• 1 tbsp coconut sugar (optional, for topping)
• Thinly sliced apple pieces (optional, for topping)
Method
1. Preheat & prep: Preheat oven to 180°C (fan-forced if possible). Line a muffin tray with patty pans.
2. Whisk wet ingredients: In a large bowl whisk yoghurt, macadamia oil, eggs and maple syrup (or honey) until smooth.
3. Combine dry: In a separate bowl, mix protein powder, spelt flour, almond flour, baking powder and cinnamon.
4. Bring together: Gently fold the dry mixture into the wet until just combined. Stir through diced apples.
5. Fill tins: Divide batter evenly among muffin cases. Top with thin apple slices and a sprinkle of coconut sugar if using.
6. Bake: Bake 20–25 minutes, or until golden and a skewer comes out clean.
7. Cool & enjoy: Allow to cool slightly before serving. Great warm, or cooled for lunch boxes.
Tips
• For extra cinnamon crunch, dust warm muffins lightly with cinnamon sugar.
• Freeze individually for up to 2 months; defrost overnight in the fridge.
